Healthy Stewed Apples
Quick 15-minute, lightly sweetened stewed apples with cinnamon and vanilla—perfect as a warm topping for oatmeal, plant-based yogurt, pancakes, or chia pudding.
- 1
Core and dice the apples into small, even pieces.
- 2
Add the diced apples, apple cider vinegar, vanilla extract, maple syrup, coconut sugar, cinnamon, and cornstarch to a saucepan.
- 3
Stir well so the cornstarch dissolves and coats the apples evenly.
- 4
Cover and cook over medium heat, stirring occasionally, until the apples are tender and the sauce is slightly thick and glossy, about 15 minutes.
- 5
Taste and adjust sweetness or cinnamon if desired, then serve warm (or chill and use later) as a topping or filling.
