Brownie Mix Chocolate Cookies
Chewy, fudgy cookies made from boxed brownie mix with a thick scoopable dough and optional chocolate chips for extra richness.
- 1
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 2
In a large bowl, mix together the brownie mix, eggs, vegetable oil, flour, vanilla extract, and salt until a thick, slightly sticky dough forms.
- 3
Fold in the chocolate chips (if using) until evenly distributed.
- 4
Scoop dough into balls (about 1 tablespoon each) and place on the prepared baking sheet, leaving about 2 inches of space between cookies.
- 5
Bake until the edges look set but the centers still look slightly underdone, about 9–11 minutes.
- 6
Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely (or enjoy slightly warm).
