
Spinach & Feta Omelette with Avocado Toast and Berries

Whisk the eggs and egg whites together with a pinch of salt and pepper.

Heat olive oil in a nonstick skillet over medium heat and sauté the spinach until wilted, 1–2 minutes.

Pour the egg mixture into the skillet over the spinach, let set for about 1 minute, then sprinkle feta evenly and fold the omelette when mostly set. Cook another 30–60 seconds to finish.

Toast the whole-grain bread. Mash the avocado with a pinch of salt and spread over the toast. Top with sliced cherry tomatoes if desired.
