Chocolate Protein Oat "Tire" Pancakes
A fun, tire-shaped breakfast using oat-banana protein pancakes with a yogurt “hub” and berry “rim,” designed to be filling and supportive of recomposition.
- 1
Blend the oats into a flour using a blender.
- 2
Add banana, egg, egg whites, whey protein, cocoa, baking powder, salt, and 2–4 tbsp water; blend until smooth and pourable.
- 3
Heat a nonstick skillet over medium heat and lightly coat with cooking spray.
- 4
To make tire shapes, pour batter into a ring (a donut shape) by circling the pan with batter, leaving a hole in the middle; repeat to make 2–3 tires depending on pan size.
- 5
Cook until bubbles form and the edges set, then flip carefully and cook the other side until done (pancakes should be cooked through).
- 6
Plate the “tires,” spoon Greek yogurt into the center holes as the “hub,” top with berries around the rim, and drizzle honey over the top.
