Chicken & Rice Bowl with Tzatziki-Style Yogurt
A simple meal-prep style bowl like the photo: seasoned chicken breast over rice with a generous spoon of thick yogurt sauce. High-protein, quick, and easy for lunch or dinner.
- 1
Pat the chicken dry and season both sides with salt, black pepper, and oregano.
- 2
Heat a nonstick skillet over medium-high heat and add olive oil.
- 3
Cook chicken 5–7 minutes per side (depending on thickness) until browned and the center reaches 74°C/165°F. Rest for 5 minutes, then slice.
- 4
While the chicken cooks, stir together Greek yogurt, lemon juice, garlic (if using), a pinch of salt, and black pepper to make a quick tzatziki-style sauce.
- 5
Warm the cooked rice (microwave or in a small pan with a splash of water).
- 6
Assemble the bowl with rice on the bottom, chicken on top, and a generous dollop of yogurt sauce on the side.
